Vegetable & Sausage Stew

Ingredients

  • Vegetable Broth
  • Fresh Tomatoes or canned Diced/Crushed Tomatoes
  • Italian Sausage
  • Carrots
  • Onion
  • Celery Hearts or Celery Root
  • Corn
  • Green Beans
  • Turnip
  • Barley (optional)

With the chill starting to settle in for Fall, this soup warms the soul. You can omit the meat if you are not in the mood for it but since I am somewhat of a meat lover, I feel the soup is incomplete without it. The first time I had it, I had one slice of garlic bread left which was a wonderful pairing. However, I was craving eggs today so I fried one up and added it as a topping. This combination is heavenly. If you like soft runny eggs, this is THE dish to have it with if you are thinking of a good brunch meal. This is Like Huevos Rancheros but with a little twist.

I’m a bit of a salt fiend so you could find this dish a little too salty if you are using both Italian sausage AND canned tomatoes. I would suggest using fresh tomatoes instead or water instead of vegetable broth. Either should bring down the salt level just a tad.
